Recipe: Swedish Brown Beans

Try this the next time you're looking for a change from your regular baked beans recipe.  This is cooked on top of the stove, and it's delicious. 

 

Swedish Brown Beans

 

From:  Scandinavian Feasts, by Beatrice Ojakangas

 

 

2 cups Swedish brown beans or pinto beans   (Note:  I’ve only made this with pinto beans)

5 cups water

1 teaspoon salt

2 teaspoons crystallized ginger, chopped

¼ cup cider vinegar

¼ cup dark corn syrup

1 teaspoon ground ginger

Additional salt, vinegar, and corn syrup (optional)

 

 

Rinse the beans and put them in a large pot.  Cover with water and let stand overnight.  Bring the water and the beans to a boil over medium-high heat, adding more water if necessary to cover the beans.  Add the salt and crystallized ginger.  Cover and simmer for 1 ½ hours or until the beans are tender (Note:  Check pinto beans after 45 minutes.).  Using a potato masher, crush some of the beans.  Add the vinegar, corn syrup, brown sugar, and ground ginger.  Simmer for 30 minutes longer, or until thickened.  Season with additional salt, vinegar, and corn syrup, if desired.

 

 

6 – 8 servings
