Message for Portia and recipe

Wishing Portia (from the TS list) a very  Happy Birthdaywith hugs and kisses and many thanks for that little fic recommendation of hers and my introduction to Toreth and Warrick.  She started it all, even though it took a virtual kick in the rear from alinewrites to get me to move the stories from the "to be read someday when I have the time" pile to the "drop everything and read these now" stack, lol!

Portia asked for virtual carrot cake for her birthday, and I'm happy to oblige.  I've included the recipe (which I clipped out of Gourmet magazine years ago) just in case she, or anyone else, would like to taste it for real.

 

Carrot Cake

In a saucepan combine 4 cups grated carrot, 2 cups sugar, 2 sticks (1 cup) butter, cut into pieces, and 1/2 cup water and bring the liquid to a boil over moderate heat, stirring.  Simmer the mixture for 5 minutes and let it cool.

Into a bowl sift together 2 1/2 cups flour, 1 tablespoon cinnamon, 2 teaspoons each of baking soda and ground cloves, 3/4 teaspoon each of ground allspice and nutmeg, and 1/2 teaspoon each of double-acting baking powder and salt.  In a large bowl beat 2 eggs until they are lemon colored and add the carrot mixture and the flour mixture, stirring until the batter is just combined.  Divide the batter between 2 buttered loaf pans, 8 1/2 by 4 1/2 by 2 5/8 inches, and bake the loaves in a preheated moderate oven (350 degrees F.) for 35 to 40 minutes, or until a cake tester inserted in the center comes out clean.  Turn the loaves out onto racks to cool, dust them with sifted confectioners' sugar, and slice them.  Arrange the slices slightly overlapping around the edge of a cake plate.

*saves Carrot cake recipe* thanks, i'm looking forward to trying it - will adapt i think - it took me several minutes to figure out what baking soda is, and as for baking powder... i don't know where i can find this stuff...

I'll be sending you a package in a day or so; will include small sizes of both ingredients. Now, if you use baking powder, you'll want to use regular flour, not self-rising flour.
